Spring is here, the bees are coming out of hibernation and the sun is breaking through so, we wanted to share this simple recipe for you to try at home.

This is a recipe from one of our private beginners baking classes in 2025, created based on what the learners enjoyed.

Ready in 45 minutes

Serves 10 - 14 people

You will need an 8 inch cake tin

Ingredients

● 150 self raising flour

● 150g softened butter

● 150g sugar

● 2 medium eggs

● 1 unwaxed lemon

● 2 tablespoons of runny honey

● 1 tablespoon of vanilla paste

● 1 tablespoon of ground nutmeg

● 50ml (5 tablespoons) of milk (or water if you prefer)

● A jar of lemon curd (optional drizzle)

● 1 or 2 edible flowers (optional garnish)

Mixing

● Add the flour, sugar and nutmeg to the bowl, mix lightly

● Zest your lemon and add to the bowl

● Add the butter, vanilla paste, juice of half a lemon and milk or water. Mix lightly

● In a separate bowl, use a fork or whisk to gently whisk the eggs until they start to get bubbles at the top of the bowl

● Add the whisked eggs into the bowl with the other ingredients and mix until smooth

TIP: Using organic ingredients is best for your body and they make your cake taste amazing

TIP: Soften cold butter in the microwave for 20 seconds if it is cold and hard

Baking

● Set the oven temperature to 150°C and turn on for 5 minutes before you need it

● Butter your baking pan lightly or line with baking parchment

● Pour your batter into the baking pan and place in the warm oven to bake

● Check the cake after 30 minutes

● If a wooden skewer or toothpick does not come out clean, bake for another 5 minutes then check again

TIP: Do the skewer/toothpick test quickly to avoid the oven temperature dropping too low, this can affect the final rise.

Finishing

● Take the cake out of the oven and leave to cool for 20 minutes before removing from the cake pan

● Mix the honey and juice of the other lemon half

● Drizzle the mix over the cake and it's ready to serve

TIP: You can also glaze with lemon curd and use garden confetti (edible flowers) to garnish your cake or any other toppings you enjoy
